Rujak (Balinese Sweet and Sour Salad)

  • Small chili peppers: 2 Each
  • Shrimp paste, roasted or fish sauce: 1 Teaspoons
  • Tamarind: 3 Tablespoons
  • Palm sugar syrup or sweet soy sauce: 4 Tablespoons
  • Sea salt: 2 Pinches

Grind ingredients together with a mortar and pestle, starting with the chili and salt. It should be chunky.
Mix the rujak with apple, pineapple, cucumber, mango, Japanese pear or jicama.
