Yield: ¾ cup
- 2 cups strawberries, hulled and quartered
- ¼ cup sugar
- Zest of 1 large Meyer lemon
- 2 tablespoons Meyer lemon juice
In a 2-quart glass bowl, combine strawberries, sugar, lemon zest and lemon juice. Let stand until very syrupy, stirring occasionally, 15 minutes.
Microwave until mixture is shiny and reduced to about ¾ cup, stirring after 5 minutes, 10 minutes total. Pour jam into a jar and let cool (it thickens as it stands).
