Yield: 1 loaf
- Flour: 2 Cups
- Sugar: 1 1/8 Cups
- Ripe medium-large bananas, mashed: 3 Each
- Baking soda: 1 Teaspoons
- Vegetable oil: 1/2 Cups
- Salt: 1/4 Teaspoons
- Buttermilk: 2 Tablespoons
- Egg: 1 Each
- Vanilla extract: 1/2 Teaspoons
- Chopped walnuts: 1/2 Cups
- Chopped walnuts: 1/3 Cups
Pre-heat oiven to 325. Grease a 9×593 loaf pan and dust with flour.
Blent together the flour, baking soda and salt and set aside. Mix together the egg, sugar and vegetable oil until combined. Add the flour mixture and when blended add the buttermilk, vanilla and mashed bananas and mix until combined. Fold in 1/2 cup of chopped walnuts.
Bake for 45 to 60 minutes, until a toothpick inserted in the center comes out clean. Cool for 10 minutes on a wire rack before removing from pan.
