Uncle Ken’s Garlic Base

Ingredients

  • Red pepper flakes: 1/4 Teaspoons
  • Oregano: 1/2 Teaspoons
  • Allspice: 1/4 Teaspoons
  • Basil leaves, crumbled: 1 Tablespoons
  • Thyme: 1 Teaspoons
  • Tarragon: 1 Teaspoons
  • Salt: 1 Teaspoons
  • Parsley, chopped: 1/4 Cups
  • Mustard powder: 1 Teaspoons
  • Black pepper: 1 Teaspoons
  • Red wine vinegar: 1/4 Cups
  • Salad or olive oil: 3/4 Cups
  • Cloves garlic, peeled: 1/2 Cups

Process garlic and vinegar in a blender or food processor until finely minced. Add oil as needed for the garlic to churn in blender. Then add remaining oil and all other ingredients. Pulse only until mixed.
This will hold for weeks in the refrigerator, but since it is not shelf-stable, do not try to store it in the pantry.
