Asian Pork Noodles with Spinach

  • 12 ounces spaghetti, broken into 3-inch pieces
  • 2 tablespoons canola oil
  • 1 pound ground pork
  • 3 tablespoons ginger, finely chopped
  • 3 tablespoons garlic
  • 2 tablespoons Asian fish sauce
  • 2 tablespoons lime juice
  • 8 packed cups curly spinach
  • Salt and pepper
  • Fresh basil


  1. Boil spaghetti and drain.
  2. In a large skillet, heat canola oil and add pork, ginger and garlic. Stir-fry over moderate heat until browned, about 5 minutes.
  3. Stir in cooked spaghetti, fish sauce, lime juice, and spinach. Season with salt and pepper and toss, garnish with basil.
