Ingredients

  • 1 lb mixed sausages
  • 1 lb Yukon Gold potatoes, quartered
  • 3 cups Sauerkraut, drained
  • 2 tablespoons olive oil
  • 1 teaspoon caraway seed
  • Salt and pepper to taste

Combine all ingredients in a large cast iron skillet.
Roast at 425º F for 45 minutes. Serve with bread and mustard.
