Ingredients
- Finely chopped pecans roasted for 15 minutes at 350 or until crisp: 1/2 Cups
- Cayenne pepper: 1/4 Teaspoons
- Vegetable oil: 2 Teaspoons
- French beans, rinsed: 1 1/2 Pounds
- Salt: 1 Pinches

Bring a large pot of water to a boil and parboil the green beans until crisp-tender, about 3 minutes. Drain, rinse under cold running water, and drain again. Set aside.
In a large skillet, melt the butter with the oil. Add the pecans and cayenne and saute, stirring constantly for 1 minute, until the nuts smell toasty. Be careful not to let the nuts burn.
Add the green beans and stir-fry for 2-3 minutes, until the beans are hot and well coated with butter and pecans. Season with salt to taste and serve immediately.
