Ingredients

  • 16 ounces beans (16 bean soup mix)
  • 3 bay leaves
  • 1 tablespoon oregano, crushed
  • 28 ounces chicken stock (non-fat)
  • 3 stalks celery, chopped
  • 3 carrots, diced
  • 1 large onion, chopped
  • 3 garlic cloves, sliced
  • 1 pound turkey Italian sausage, sliced
  • 29 ounces tomatoes (stewed or diced)

Instructions

  1. Combine bean soup mix, bay leaves, oregano, chicken stock, and enough water to cover the beans by 1-2″ in crock pot.
  2. Cook on high for 2 hours.
  3. Add remaining ingredients and shift cooker to low. Cook for additional 3 hours.
